When my mother was turning 90 years old, I went home to Mississippi for the express purpose of celebrating her birthday. She lived in the community for over 50 years, so it was an opportunity for family and friends to honor a woman of poise, dignity, intelligence, and humor.
She enjoyed reading and doing the daily crossword puzzle. She loved visiting.
Mother was a nurse anesthetist before she retired, but her nursing skills were shared with the community even when she was not on duty. I can remember a young girl coming to the house for allergy shots on a regular basis. Mother did this as a service to this family, saving them a trip to the doctor’s office, and charged them nothing.
This young girl, all grown up, attended the open house we held for Mother, declaring Miz Cook “saved my life when I was a kid.”
My Mother could boast of 8 children who adore her, numerous grandkids, and several great grands. One of them, a 3 year old, burst through the door 2 hours before the birthday party started officially.
It was obvious he had been carefully coached by his parents to greet his great grandmother. In his excitement, he honed in on the first grey haired old lady he saw & and proclaimed, “Happy birthday, Mamaw Cook.” Unfortunately, that lady was ME!!
Now I embrace my “middle aged-ness”, but I don’t think I look NINTY years old…yet!! I laughed and pointed him toward the birthday girl, then retreated to the bedroom to do my hair and make-up!! :-)
We served a variety of savory snacks that day along with a delicious punch and Red Velvet Cake. I’m sharing today the recipe for Pimento Cheese Spread. We served this with variety of crackers & vegetables.
Proverbs 31:28 says this about a virtuous woman…”Her children arise up, and call her blessed.”
PIMENTO CHEESE BALL
2 (8-oz.) pkgs. cream cheese, softened 2 dashes garlic powder
1 (14-oz.) pkg. prepared pimento cheese spread 1 sm. fresh onion, grated
Combine all ingredients together. Mixture will be soft, but will firm up a little as cream cheese chills in refrigerator.
Chill and roll in chopped nuts or place in a small crock topped with nuts. Serve with crackers. Grating the onion will make it juicy. Be sure to add the juice to the mixture to add to the flavor.
Note: I love cheese. It’s a wonderful addition to any appetizer buffet. I got this recipe after it was served at a friend’s wedding and it is a delicious way to remember their day.
